Cupcakes!

Postby happydays525 » Sun May 13, 2012 10:02 pm

Soooo...I needed to make a treat to take in to Zoey's class tomorrow for her birthday (they are celebrating tomorrow since she has a summer birthday and won't be in school then) and I saw these beautiful and classy cupcakes posted on Facebook by our lovely Lisa and knew I had to make cupcakes! Don't they look so distinguished? I wish I had that recipe Lisa!! Will you share please?

We opted for plain vanilla with lots of PINK frosting...because we're taking about 7 and 8 year olds here. ;D

I cut the little flags out using my Silhouette Cameo and Zoey added some glittered up Doodlebug stickers. :) I think they look so bright and fun!! Hoping the boys in her class won't mind the pink! ;)

Jen they look so professional.
I love the cases they are in. Where did you get them from?

Glad you like mine and Hollie's cupcakes.
We made the recipe ourselves and we've called them Strawberry Ripple Icecream Cupcakes.

It's a vanilla sponge left to go cold.
Then we made a vanill buttercream frosting and added about 100ml of cream that we whipped up thick in the frosting. (this was for just 7 cupcakes)
We added a couple of big spoons of Strawberry jam (jelly) and whipped the frosting up so it was really thick. We then used a thick concentrated pink colouring and dipped a long skewer into it and stirred in through the frosting. We did this a few times so the frosting had a rippled/streaked pink look going through.
We added a small amount of strawberry jame to the tops of the cakes and then piped the frosting onto the cakes and placed them all in the fridge.

They firm up wonderfully and the idea is that the frosting is like a strawberry icecream flavour and texture.

Yummy!!!

I blogged about a blog post I found on a Disney blog yesterday all about cupcakes,
a fab blog post and made me want to bake.

Lisa, the cupcake liners are made by Wilton and I actually got them at Wal-Mart here. The actual cupcake cups that I used for the cupcakes are all mis-matched!!! Some are purple fairy ones, others red polka-dot and yet some others were hearts so I put them in the pink liners to make them look cuter. :) Because that's so important you know! ;)

Thanks for sharing that link to the cupcakes, WOW! Those are awesome!
